Ingredients
  

Pasta
  • 12 oz fettuccine pasta
  • 3 large yellow onions thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
Sauce
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese freshly grated
  • 1/2 cup reserved pasta water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp parsley chopped

Method
 

  1. Slowly caramelize onions in butter and olive oil until deep golden brown.
  2. Cook pasta until al dente and reserve pasta water.
  3. Add garlic and cook briefly.
  4. Stir in cream and simmer gently.
  5. Add Parmesan cheese and seasonings.
  6. Toss pasta with sauce, adjusting consistency with pasta water.
  7. Garnish and serve immediately.

Notes

Low and slow onion caramelization is the key to achieving deep flavor.
