Ingredients
  

Pasta Salad
  • 12 oz rotini pasta
  • 1 cup sun-dried tomatoes drained and chopped
  • 2 cups baby spinach chopped
  • 1/2 cup parmesan cheese grated
  • 1/4 cup fresh basil chopped
  • 1/4 cup red onion finely diced
Dressing
  • 1/3 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 2 cloves garlic minced

Equipment

Method
 

  1. Cook pasta until al dente and drain.
  2. Prepare vegetables and whisk together dressing ingredients.
  3. Combine everything in a large bowl, chill, and serve.

Notes
