  • 6 bell peppers tops removed
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 cup shredded cheese

Method
 

  1. Prepare bell peppers by removing tops and seeds.
  2. Cook onion, garlic, and ground beef in a skillet until browned.
  3. Mix cooked beef with rice, tomatoes, and seasoning.
  4. Fill peppers with mixture and top with cheese.
  5. Bake at 375°F for 35 minutes until peppers are tender.

Notes

For a low-carb version replace rice with cauliflower rice.
