  • 2 cups shredded chicken breast
  • 1.5 cups corn kernels grilled or roasted
  • 1 large cucumber diced
Dressing
  • 0.5 cup mayonnaise
  • 0.25 cup Greek yogurt
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
Toppings
  • 0.25 cup crumbled cheese
  • 2 tbsp fresh cilantro chopped

Method
 

  1. Cook and shred the chicken breast if not already prepared.
  2. Heat oil in a skillet and char the corn slightly, then let it cool.
  3. Dice cucumber and chop cilantro.
  4. Mix dressing ingredients in a bowl until smooth.
  5. Combine chicken, corn, cucumber, and dressing.
  6. Top with cheese and cilantro, then chill before serving.
