- Preheat oven to 350°F (180°C) and grease a muffin tin.
- Sauté onion and garlic in olive oil until soft, then add spinach and cook until wilted.
- Whisk eggs, milk, and olive oil in a mixing bowl.
- In another bowl mix flour, baking powder, salt, and pepper.
- Combine wet and dry ingredients, then fold in spinach mixture and feta cheese.
- Fill muffin cups 3/4 full and bake for 18–22 minutes until golden.

These muffins are perfect for meal prep and can be refrigerated for 4 days or frozen for up to 3 months.
