Ingredients
  

Main Batter
  • 6 eggs
  • 1 cup fresh spinach chopped
  • 1/2 cup feta cheese crumbled
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 cup milk
  • 2 tbsp olive oil
  • 1/4 cup onion finely chopped
  • 1 clove garlic minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
Optional Add Ins
  • 1/4 cup mozzarella cheese shredded
  • 1/4 cup red bell pepper diced

Equipment

Method
 

  1. Preheat oven to 350°F (180°C) and grease a muffin tin.
  2. Sauté onion and garlic in olive oil until soft, then add spinach and cook until wilted.
  3. Whisk eggs, milk, and olive oil in a mixing bowl.
  4. In another bowl mix flour, baking powder, salt, and pepper.
  5. Combine wet and dry ingredients, then fold in spinach mixture and feta cheese.
  6. Fill muffin cups 3/4 full and bake for 18–22 minutes until golden.

Notes

These muffins are perfect for meal prep and can be refrigerated for 4 days or frozen for up to 3 months.
