- Preheat oven to 375°F (190°C) and prepare muffin tin.
- Whisk flour, baking powder, baking soda, salt, and pepper.
- In another bowl whisk eggs, milk, and olive oil.
- Combine wet and dry ingredients until just mixed.
- Fold in spinach, feta, green onions, and oregano.
- Fill muffin cups ¾ full with batter.
- Bake 18–22 minutes until golden and cooked through.
