Ingredients
  

Muffin Batter
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 eggs large
  • 0.75 cup milk
  • 0.25 cup olive oil
  • 1 cup spinach chopped
  • 0.75 cup feta cheese crumbled
  • 2 tbsp green onions chopped
  • 1 tsp oregano

Method
 

  1. Preheat oven to 375°F (190°C) and prepare muffin tin.
  2. Whisk flour, baking powder, baking soda, salt, and pepper.
  3. In another bowl whisk eggs, milk, and olive oil.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in spinach, feta, green onions, and oregano.
  6. Fill muffin cups ¾ full with batter.
  7. Bake 18–22 minutes until golden and cooked through.

Muffins freeze well for meal prep breakfasts.
