Ingredients
  

Chicken
  • chicken pieces bone-in preferred
Pepper Base
  • tomatoes
  • red bell peppers
  • scotch bonnet peppers

Equipment

  • large cooking pot
  • blender
  • Wooden spoon

Method
 

  1. Blend tomatoes, peppers, and onions into smooth puree.
  2. Season and brown chicken in hot oil.
  3. Sauté aromatics in same pot.
  4. Cook blended pepper base until thick and oil separates.
  5. Add tomato paste and cook further.
  6. Return chicken, add stock, and simmer until tender.

Notes

Frying pepper base properly is key to authentic Nigerian stew flavor.
