- Pound chicken breasts to an even 1/4-inch thickness.
- Cook garlic and spinach in olive oil until wilted, then cool slightly.
- Mix spinach with feta and sun-dried tomatoes.
- Season chicken with Italian seasoning, paprika, salt, and pepper.
- Spread filling over chicken, roll tightly, and secure with toothpicks.
- Sear rolls until lightly golden.
- Bake at 375°F (190°C) for 20–25 minutes until cooked through.
- Rest, slice, garnish, and serve.
