Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts pounded thin
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
Filling
  • 2 cups fresh spinach chopped
  • 0.5 cup feta cheese crumbled
  • 0.33 cup sun-dried tomatoes chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil

Method
 

  1. Pound chicken breasts to an even 1/4-inch thickness.
  2. Cook garlic and spinach in olive oil until wilted, then cool slightly.
  3. Mix spinach with feta and sun-dried tomatoes.
  4. Season chicken with Italian seasoning, paprika, salt, and pepper.
  5. Spread filling over chicken, roll tightly, and secure with toothpicks.
  6. Sear rolls until lightly golden.
  7. Bake at 375°F (190°C) for 20–25 minutes until cooked through.
  8. Rest, slice, garnish, and serve.

Notes

For maximum juiciness, remove chicken from the oven as soon as it reaches 165°F internal temperature.
