  • 1 lb carrots peeled and cut
  • 2 tbsp butter
  • 2 tbsp maple syrup
  • 1 tbsp brown sugar
  • 1 tbsp olive oil

Method
 

  1. Preheat oven to 400°F and cut carrots into even pieces.
  2. Toss carrots with olive oil, salt, and pepper.
  3. Roast carrots on a baking sheet for 20 minutes.
  4. Prepare glaze by melting butter with maple syrup and brown sugar.
  5. Coat carrots with glaze and roast another 8–10 minutes.

Notes

Use pure maple syrup for the best flavor.
