Ingredients
  

Pasta & Chicken
  • 300 g pasta
  • 2 chicken breasts
Pesto Sauce
  • 2 cups fresh basil
  • 1/3 cup olive oil
  • 2 garlic cloves
  • 1/4 cup parmesan cheese
  • 2 tbsp pine nuts
  • 1 tbsp lemon juice

Equipment

  • pot
  • skillet or grill pan
  • blender or food processor

Method
 

  1. Cook pasta until al dente and reserve pasta water.
  2. Grill chicken until fully cooked and slice into strips.
  3. Blend basil pesto ingredients until smooth.
  4. Toss pasta with pesto and chicken, adjusting with pasta water.

Notes

Add pasta water slowly to keep the sauce light and silky.
