  • 2 zucchini sliced
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 lemon zest
  • 1 lemon juice
  • 1 cup parmesan cheese grated

Method
 

  1. Cook rigatoni in salted boiling water until al dente and reserve some pasta water.
  2. Sauté garlic in olive oil, then add zucchini and cook until tender.
  3. Add lemon zest, juice, pasta, and parmesan. Toss, season, and serve.

Notes

Use fresh lemon and freshly grated parmesan for best flavor.
