Ingredients
  

Pasta
  • 12 oz linguine pasta
Chicken
  • 2 chicken breasts boneless skinless
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 lemon zested and juiced
  • 0.5 cup chicken broth
  • 0.5 cup parmesan cheese grated
  • 2 tbsp butter
  • 2 tbsp parsley chopped
  • 1 tsp oregano
  • 0.5 tsp thyme
  • salt to taste
  • black pepper to taste

  • large skillet
  • Pasta pot

Method
 

  1. Cook linguine in salted boiling water until al dente. Reserve pasta water and drain.
  2. Season chicken with salt, pepper, oregano, and thyme.
  3. Cook chicken in olive oil until golden and cooked through. Remove and slice.
  4. Sauté garlic in the same pan until fragrant.
  5. Add lemon juice and chicken broth and simmer.
  6. Stir in butter and lemon zest.
  7. Add cooked pasta and toss to coat.
  8. Return chicken, parmesan, and parsley. Toss and serve warm.

Notes

Add pasta water if needed to loosen the sauce.
