Method
- Preheat oven to 425°F and pat chicken dry.
- Mix butter, olive oil, garlic, lemon juice, salt, pepper, paprika, and thyme.
- Rub mixture all over chicken and under the skin.
- Place lemon slices inside cavity and roast for 60–75 minutes.
- Rest chicken 10 minutes before carving and garnish with parsley.
Notes
Basting the chicken during roasting keeps the meat juicy and flavorful.
