  • 1 whole chicken 4–5 pounds
  • 3 tbsp olive oil
  • 3 tbsp butter softened
  • 5 garlic cloves minced
  • 1 lemon sliced

Method
 

  1. Preheat oven to 425°F and pat chicken dry.
  2. Mix butter, olive oil, garlic, lemon juice, salt, pepper, paprika, and thyme.
  3. Rub mixture all over chicken and under the skin.
  4. Place lemon slices inside cavity and roast for 60–75 minutes.
  5. Rest chicken 10 minutes before carving and garnish with parsley.

Notes

Basting the chicken during roasting keeps the meat juicy and flavorful.
