Cake Batter
  • 1.5 cups all purpose flour
  • 2 tsp baking powder
  • 0.25 tsp salt
  • 1 cup plain yogurt
  • 0.75 cup sugar
  • 3 eggs
  • 0.5 cup vegetable oil
  • 1 lemon zest
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup blueberries

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Whisk flour, baking powder, and salt.
  3. Mix yogurt, sugar, eggs, oil, lemon zest, lemon juice, and vanilla.
  4. Combine wet and dry ingredients.
  5. Fold in blueberries.
  6. Pour batter into pan.
  7. Bake 40–45 minutes until done.

Notes

Optional lemon glaze adds extra citrus flavor.
