Crust
  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 tbsp sugar
Cheesecake Filling
  • 16 oz cream cheese softened
  • 3/4 cup sugar
  • 2 eggs
  • 2 tbsp lemon juice fresh
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
Blueberry Swirl
  • 1 cup blueberries
  • 2 tbsp sugar
  • 1 tsp cornstarch

Method
 

  1. Prepare and bake graham cracker crust until lightly golden.
  2. Cook blueberries with sugar, lemon juice, and cornstarch until thickened.
  3. Mix cheesecake filling until smooth and creamy.
  4. Pour filling over crust and swirl blueberry sauce on top.
  5. Bake until edges are set, then chill completely before slicing.
