- Preheat oven to 325°F (165°C) and line baking sheet with parchment.
- Mix oats, almonds, cinnamon, and salt in a bowl.
- Whisk honey, coconut oil, and vanilla together.
- Combine wet and dry ingredients and mix well.
- Spread mixture evenly on baking sheet.
- Bake 20–25 minutes, stirring halfway.
- Cool completely and add dried fruit if desired.
Notes
Press granola mixture before baking for larger crunchy clusters.
