Ingredients
  

Potatoes
  • 1 kg baby potatoes
  • salt for boiling water
Dressing
  • 1/2 cup mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
Herbs
  • 2 tbsp dill
  • 2 tbsp parsley
  • 2 tbsp chives

Method
 

  1. Boil baby potatoes in salted water until fork-tender, then drain.
  2. Halve or lightly smash potatoes once slightly cooled.
  3. Whisk dressing ingredients together until smooth.
  4. Toss potatoes with dressing and fresh herbs, then chill before serving.

Notes

For best flavor, let the salad rest for at least 30 minutes before serving.
