Ingredients
  

Onion Rings
  • 2 large sweet onions cut into thick rings
  • 8 oz cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • 2 jalapeños finely diced
Coating
  • 1 cup all-purpose flour
  • 2 eggs
  • 2 cups panko breadcrumbs

Method
 

  1. Slice onions into thick rings and pair large rings with smaller rings.
  2. Mix cream cheese, cheddar, jalapeños and seasonings until smooth.
  3. Fill gaps between onion rings with cheese mixture and freeze until firm.
  4. Bread rings using flour, egg wash and breadcrumbs.
  5. Fry at 350°F until golden brown and crispy.
  6. Drain and serve immediately with dipping sauce.

Notes

Double-coating the rings creates the crispiest texture and helps prevent filling from leaking.
