Sweet Potato Wedges
  • 3 sweet potatoes large
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 0.5 tsp oregano
  • 0.5 tsp thyme

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash sweet potatoes and cut them into evenly sized wedges.
  3. Soak wedges in cold water for 20 minutes, then dry completely.
  4. Toss wedges with olive oil and seasoning mixture.
  5. Arrange wedges on baking sheet in a single layer.
  6. Bake 25–30 minutes, flipping halfway through.
  7. Remove from oven, garnish with parsley, and serve warm.

Notes

Cornstarch can be added to increase crispiness.
