Ingredients
  

Chicken
  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
Pasta
  • 300 g pasta penne or fettuccine
Sauce
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup parmesan cheese grated
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup spinach

Equipment

Method
 

  1. Cook pasta according to package instructions.
  2. Season chicken and cook in olive oil until golden and fully cooked.
  3. Remove chicken and slice.
  4. Melt butter and sauté garlic.
  5. Add cream and chicken broth.
  6. Stir in parmesan cheese until melted.
  7. Add sun-dried tomatoes and spinach.
  8. Add cooked pasta and toss with sauce.
  9. Top with sliced chicken and garnish with parsley.
