Ingredients
  

Pasta
  • 12 oz pasta penne or fettuccine
  • 2 tbsp olive oil
  • 1/2 onion chopped
  • 3 cloves garlic minced
Roasted Pepper Sauce
  • 1 cup roasted red peppers
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Equipment

  • large skillet
  • blender or food processor
  • large pasta pot

Method
 

  1. Cook pasta in salted boiling water until al dente and reserve some pasta water.
  2. Sauté onion and garlic in olive oil until fragrant.
  3. Blend roasted red peppers with sautéed mixture until smooth.
  4. Return sauce to skillet, add cream and seasonings, and simmer.
  5. Stir in Parmesan cheese until melted and creamy.
  6. Toss cooked pasta with the sauce and serve with basil and extra cheese.

Notes

Use freshly roasted peppers for the best flavor and adjust cream for desired sauce thickness.
