Creamy Mushroom Pasta

Ingredients
  

Pasta
  • 300 g pasta fettuccine or penne
  • 2 cups mushrooms sliced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Equipment

Method
 

  1. Cook pasta in salted boiling water until al dente then drain.
  2. Heat olive oil and butter in a skillet then sauté mushrooms until golden.
  3. Add garlic and cook briefly until fragrant.
  4. Pour in cream and simmer until slightly thickened.
  5. Add parmesan cheese and stir until melted.
  6. Toss cooked pasta in the sauce and garnish with parsley.

Notes

Add reserved pasta water to loosen the sauce if it becomes too thick.
