Ingredients
  

Corn Mixture
  • 5 cups sweet corn kernels fresh, frozen or canned
  • 2 tbsp butter
  • 1/3 cup mayonnaise
  • 1/3 cup Mexican crema or sour cream
  • 1/2 cup cotija cheese crumbled
Garnish
  • 1/4 cup cilantro chopped
  • 1 lime wedges for serving

Method
 

  1. Char corn in butter until lightly caramelized.
  2. Whisk together dressing ingredients until smooth.
  3. Combine corn, dressing and cheese. Spoon into cups and garnish before serving.

Notes

For the best flavor, allow the corn to develop visible char before mixing with the dressing.
