Ingredients
  

Main Soup Base
  • 1 cup wild rice rinsed
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 1 cup mushrooms sliced
  • 6 cups vegetable broth
Creamy Finish
  • 1 cup coconut milk full-fat
  • 2 cups spinach or kale
  • 1 tbsp lemon juice

Method
 

  1. Heat olive oil in a pot and sauté onion until translucent.
  2. Add garlic, carrots, celery, and mushrooms and cook until softened.
  3. Add wild rice, broth, and spices, then simmer until rice is tender.
  4. Stir in coconut milk and greens, cook briefly, then season and serve.

Notes

For extra richness, blend a portion of the soup before adding coconut milk.
