Ingredients
  

Fish & Rice
  • 4 white fish fillets
  • 1 cup jasmine rice
Coconut Lime Sauce
  • 400 ml coconut milk
  • 2 tbsp lime juice
  • 3 garlic cloves minced
  • 1 tbsp grated ginger
  • 1 tsp chili flakes

Equipment

Method
 

  1. Cook jasmine rice until fluffy and set aside.
  2. Sear seasoned fish fillets in a pan until lightly golden.
  3. Simmer coconut lime sauce, then cook fish in sauce until flaky.

Notes

Do not overcook fish; it should flake easily for best texture.
