Ingredients
  

Pastry and Filling
  • 2 sheets puff pastry thawed
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup cooked turkey sausage crumbled
  • 1/2 cup red bell pepper diced
  • 1/4 cup green onions chopped
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Egg Wash
  • 1 large egg
  • 1 tbsp milk

Equipment

Method
 

  1. Cook bell peppers in butter until softened.
  2. Scramble eggs with salt and pepper and allow to cool slightly.
  3. Mix eggs with turkey sausage, cheese, and green onions.
  4. Cut puff pastry into rectangles.
  5. Fill pastry rectangles with egg mixture.
  6. Seal with remaining pastry pieces and crimp edges.
  7. Brush with egg wash and vent tops.
  8. Bake at 400°F for 18–22 minutes until golden brown.

Notes

Allow filling to cool before assembling to maintain flaky pastry layers.
