- Cook bell peppers in butter until softened.
- Scramble eggs with salt and pepper and allow to cool slightly.
- Mix eggs with turkey sausage, cheese, and green onions.
- Cut puff pastry into rectangles.
- Fill pastry rectangles with egg mixture.
- Seal with remaining pastry pieces and crimp edges.
- Brush with egg wash and vent tops.
- Bake at 400°F for 18–22 minutes until golden brown.
